yum-yum salad

Serves 6–8

20 minutes active time

ingredients

2 cups grated pineapple, drained

1 cup sugar

juice of 1 lemon

2 tbsp gelatin

1 pt heavy cream, whipped (or cool whip)

1/2 to 3/4 cup medium/sharp cheddar, shredded

instructions

1. Soak the 2 tbsp of gelatin in 1/2 cup of cold water for 5 minutes.

2. Heat together the pineapple, sugar, and lemon juice. Remove from heat and add gelatin while cooling. 

3. When mix is fully cooled, add whipped cream and cheese. Place in large flat baking dish (9×13 pan works well) and cool until firm.
