irish soda bread

Makes one loaf

Oven at 425ºF

55 minutes

ingredients

4 cups AP flour

1/2 tsp salt

1 tsp baking powder

3 tbsp sugar

2 cups buttermilk

1 egg (lightly beaten)

2 tbsp melted Irish butter (Kerrygold)

instructions

1. Preheat oven to 425º.

2. Sift dry ingredients together into large bowl.

3. Make a small well in the dry ingredients and add the egg, butter, and buttermilk. Mix dough together (works best by hand).

Note: you may not need all 2 cups of buttermilk

4. Once dough has pulled together, transfer to floured surface and knead lightly to form a circle.

5. Place dough ball on baking sheet (will be lumpy). Cut X in the top and cook at 425º for 40-45 minutes.

Note: Test the doneness by knocking; if it sounds hollow, it’s done.
