bacon cheddar scones

Set oven to 425ºF

ingredients

2 cups AP flour

1/2 tsp salt

1 tbsp baking powder

2 tsp sugar

4 tbsp cold butter

1 cup shredded cheddar

1/2 lb (or 6-8 slices) cooked

bacon, crumbled

3/4 cup heavy cream

2 tbsp heavy cream

instructions

1. Set oven to 425ºF and prepare baking sheet.

2. Whisk together flour, salt, baking powder, and sugar.

3. Cut in cold butter until mixture is crumbly.

4. Mix in shredded cheese and crumbled bacon.

5. Add 3/4 cup heavy cream and mix together. If the batter is not sticking together or there are many crumbs at the bottom, add more heavy cream until dough comes together.

6. Ball dough together and transfer to baking sheet. Press down until dough is approx. 3/4 in thick, and shape the outsides into a circular shape.

7. Brush the top with heavy cream until lightly covered. Bake for 22-24 minutes. (If center is not done, cut scone into 8 slices and cook for additional 3-4 minutes.)
