date-nut pudding

Serves 6–8

Oven at 350ºF

60 minutes

ingredients

2 cups chopped dates

1 cup chopped pecans

2 cups flour

2 cups white sugar

2 cups hot water

2 eggs, lightly beaten

6 tbsp butter

1 tsp vanilla

2 tsp baking soda

2 tsp baking powder

pinch of salt

instructions

1. Preheat oven to 350ºF. Prepare a 9×13 or similarly sized baking dish.

2. Put dates into a large bowl. Sprinkle the baking soda on top, then pour the hot water over the mix. Add butter and let melt.

3. Sift dry ingredients together (flour, sugar, baking powder, salt). Add to date mixture and fold to combine.

4. Add the vanilla, buts, and 2 eggs, lightly beaten. Pour mix into prepared baking dish and cook for at least 45 minutes. 

5. Serve warm with whipped cream.
