Baked Goat Cheese Salad
salad with baked herbed goat cheese Serves 3–4 Oven at 475ºF Freezer time 30 minutes 20 minutes ingredients goat cheese balls: 3 oz bread crumbs (about 2 cups) 1 tsp ground black pepper 3 large eggs 2 tbsp Dijon mustard 1 tbsp chopped fresh thyme leaves 1 tbsp chopped fresh chives 12 oz goat cheese extra-virgin olive oil salad: 6 tbsp extra-virgin olive oil 2 tbsp red wine vinegar 1 tbsp Dijon mustard 1 tsp minced shallot 1/4 tsp table salt ground black pepper 14 cups mixed delicate and spicy salad greens, such as arugula, baby spinach, and frisée, washed and dried instructions 1. Preheat oven to 475ºF and adjust a rack to the topmost level. Prepare a cookie sheet. 2. Combine the bread crumbs and ground pepper in a small bowl. Combine the eggs and 2 tbsp of Dijon in a second small bowl. Combine the thyme and chives in a third small bowl. 3. Cut the goat cheese into disks with floss or kitchen twine and roll into balls (should should get at least 12). Roll each ball first in the herb mix, then the egg mix, then the bread crumb mix. Place onto a cookie sheet, flatten into disks, and freeze for 30 minutes. 4. While cheese is chilling, make the dressing by combining vinegar, mustard, shallot, and 1/4 teaspoon salt in large bowl. Whisking constantly, drizzle in oil. Season with pepper to taste. 5. Remove cheese from freezer and brush each piece lightly with olive oil. Bake until crumbs are golden brown and cheese is soft but not melted (7–9 minutes). 6. Let the cheese cool for a few minutes. Toss the greens in the dressing, then add the cheese disks and serve while warm. Yum-Yum Salad
yum-yum salad Serves 6–8 20 minutes active time ingredients 2 cups grated pineapple, drained 1 cup sugar juice of 1 lemon 2 tbsp gelatin 1 pt heavy cream, whipped (or cool whip) 1/2 to 3/4 cup medium/sharp cheddar, shredded instructions 1. Soak the 2 tbsp of gelatin in 1/2 cup of cold water for 5 minutes. 2. Heat together the pineapple, sugar, and lemon juice. Remove from heat and add gelatin while cooling. 3. When mix is fully cooled, add whipped cream and cheese. Place in large flat baking dish (9×13 pan works well) and cool until firm.
Sabrina’s Favorite Rice
sabrina’s favorite rice Serves 4–6 Use an InstantPot or stovetop 30–40 minutes ingredients 1 cup short-grain rice (I use jasmine) 4–6 gloves of garlic 1 yellow onion (small/medium) 1 tbsp butter (ish) 1 can coconut milk Chicken stock (or vegetable) instructions 1. Prep ingredients: wash rice, finely dice onion, mince garlic. 2. Turn the InstantPot to saute mode. Melt the butter in the pot, ensuring there’s enough to cover the bottom. Add the onion and garlic and cook until the onion becomes translucent. 3. Add the rice and toast for a few minutes, stirring almost constantly. 4. Turn off the saute mode on the InstantPot. Add the can of coconut milk, and add around 1/4–1/2 cup of stock depending on how you like your rice texture. 5. Pressure cook on High for 3 minutes. Let the InstantPot naturally release steam (usually takes about 25–30 minutes). Remove lid, fluff rice with a fork, and serve. Mac and Cheese
mac & cheese Serves 6–8 Oven at 350ºF 45 minutes ingredients 8 oz elbow noddles 1/4 cup butter 3 tbsp AP flour 1/8 tsp salt 1/8 tsp pepper 2 cups milk 2 cups (8 oz) American cheese 2 cups crushed crackers instructions 1. Preheat oven to 350º. 2. Cook pasta for 10 minutes and drain. Pour into 8×10 baking dish. 3. Melt butter in medium sauce pan. Add flour, salt, and pepper. 4. Once mixture is smooth and bubbly, gradually add milk. Stir constantly over medium heat until boils. 5. Gradually mix in cheese. Stir over low heat until cheese is melted. 6. Pour cheese mixture over pasta. Cover in crushed crackers and bake for 25 minutes. Irish Soda Bread
irish soda bread Makes one loaf Oven at 425ºF 55 minutes ingredients 4 cups AP flour 1/2 tsp salt 1 tsp baking powder 3 tbsp sugar 2 cups buttermilk 1 egg (lightly beaten) 2 tbsp melted Irish butter (Kerrygold) instructions 1. Preheat oven to 425º. 2. Sift dry ingredients together into large bowl. 3. Make a small well in the dry ingredients and add the egg, butter, and buttermilk. Mix dough together (works best by hand). Note: you may not need all 2 cups of buttermilk 4. Once dough has pulled together, transfer to floured surface and knead lightly to form a circle. 5. Place dough ball on baking sheet (will be lumpy). Cut X in the top and cook at 425º for 40-45 minutes. Note: Test the doneness by knocking; if it sounds hollow, it’s done.
