lemon bars deluxe Makes about 30 bars Oven at 350ºF 60 minutes ingredients 2 cups flour, sifted 1/2 cup powdered sugar, sifted 1 cup vegetable oil 4 eggs, beaten 2 cups white sugar 1/3 cup lemon juice 3/4 cup flour*** 1/2 tsp baking powder instructions 1. Preheat oven to 350ºF. Prepare a 9×13 baking dish. 2. Sift together 2 cups of flour with 1/2 cup of powdered sugar. Cut in the oil until the mixture clings together.  3. Press mix into the 9×13 pan. Bake for 20–25 minutes or until lightly browned. 4. While the base is baking, beat eggs, sugar, and lemon juice together. Sift the flour*** and baking powder together, then stir into the egg mixture.  5. Pour over the HOT crust once it’s done baking. Put back into the oven for 25 minutes.  6. Sprinkle the top with powdered sugar. Cool and cut into bars.   ***Start with 1/4 cup of flour for the egg mixture and add more until the consistency looks right. The recipe card has 3/4 cup in the ingredient list but 1/4 cup in the instruction list. Prune Spice Cake

prune spice cake Serves 8–10 Oven at 300ºF 60 minutes ingredients cake 3 eggs, beaten 1 cup vegetable oil 1 1/2 cup sugar 1 cup buttermilk 1 1/2 tsp baking soda (in milk) 1 cup diced prunes (or dates) 1 tsp cinnamon 1 tsp nutmeg 1 tsp allspice 1 tsp vanilla 2 cups flour 1 cup chopped nuts   sauce 1 cup sugar 1/2 cup buttermilk 1/2 tsp baking soda 1 tbps white Karo 1/2 stick butter 1/2 tsp vanilla instructions 1. Set oven to 300ºF. Prepare a 9×13 baking dish. 2. Mix all cake ingredients together and pour into prepared baking dish. Bake for 45 minutes or until done.  3. While cake is baking, mix sauce ingredients in a pot. Boil for 2 minutes at a lively boil.  4. Poke holes in the cake and pour sauce over cake while hot. 

Peanut Butter Pie

peanut butter pie Serves 6–8 30 minutes ingredients 1 pie shell, cooked/ready to eat   filling 1/4 cup cornstarch (or 1/2 cup flour) 2 cups scalded milk (recipe note: 1 cup canned milk and 1 cup water) 1/4 vanilla 2/3 cup sugar 1/4 tsp salt 2 tbsp butter 3 egg yolks, beaten   crumbs 1 cup powder sugar 1/2 cup creamy peanut butter instructions 1. For the crumbs: mix the powder sugar and peanut butter together until crumbs form. 2. For the filling: mix all ingredients together, stirring constantly, until thick. 3. Spread 2/3 cup of the crumbs over the bottom of the pie shell (pre-cooked). Pour filling over the crumbs and refrigerate until solid.  4. To serve, top with a layer of Cool Whip and sprinkle remaining crumbs over top. Keep refrigerated.    Houck family recipe

Yum-Yum Salad

yum-yum salad Serves 6–8 20 minutes active time ingredients 2 cups grated pineapple, drained 1 cup sugar juice of 1 lemon 2 tbsp gelatin 1 pt heavy cream, whipped (or cool whip) 1/2 to 3/4 cup medium/sharp cheddar, shredded instructions 1. Soak the 2 tbsp of gelatin in 1/2 cup of cold water for 5 minutes. 2. Heat together the pineapple, sugar, and lemon juice. Remove from heat and add gelatin while cooling.  3. When mix is fully cooled, add whipped cream and cheese. Place in large flat baking dish (9×13 pan works well) and cool until firm.

Zucchini Bread

zucchini bread Serves 6–8 Oven at 350ºF 55 minutes ingredients 3 eggs 1 cup oil 3 cups whole wheat flour 2 cups honey 1 tsp salt 1 tsp baking soda 3 tsp cinnamon 1/4 tsp baking powder 2 cups grated zucchini 3 tsp vanilla 1 cup nuts (optional) instructions 1. Preheat oven to 350ºF. Prepare 2 bread pans. 2. Combine oil and honey. Add lightly beaten eggs and vanilla. 3. Combine dry ingredients (flour, salt, baking soda, cinnamon, baking powder). Add to the wet mixture slowly, mixing well. 4. Add zucchini and nuts if using. Bake for 40 minutes or until a knife comes away clean. Date-Nut pudding

date-nut pudding Serves 6–8 Oven at 350ºF 60 minutes ingredients 2 cups chopped dates 1 cup chopped pecans 2 cups flour 2 cups white sugar 2 cups hot water 2 eggs, lightly beaten 6 tbsp butter 1 tsp vanilla 2 tsp baking soda 2 tsp baking powder pinch of salt instructions 1. Preheat oven to 350ºF. Prepare a 9×13 or similarly sized baking dish. 2. Put dates into a large bowl. Sprinkle the baking soda on top, then pour the hot water over the mix. Add butter and let melt. 3. Sift dry ingredients together (flour, sugar, baking powder, salt). Add to date mixture and fold to combine. 4. Add the vanilla, buts, and 2 eggs, lightly beaten. Pour mix into prepared baking dish and cook for at least 45 minutes.  5. Serve warm with whipped cream. Toffee Bars

toffee bars Serves 8–10 Over at 350ºF 45 minutes ingredients 1/2 cup butter 1/2 cup brown sugar 1 cup flour 2 eggs, beaten 1 cup brown sugar 1 tsp vanilla 2 tbsp flour 1 tsp baking powder 1/2 tsp salt 1 cup coconut 1 cup chopped nuts instructions 1. Preheat oven to 350ºF. Prepare a 9×13 baking dish. 2. Mix butter and 1/2 cup of brown sugar, then add 1 cup of flour. Press into the 9×13 pan and bake for 10 minutes. 3. While baking, beat 2 eggs together and add 1 cup of brown sugar and the vanilla. Then add the 2 tbsp flour, the baking powder, and salt. Mix well. Add coconut and chopped nuts. 4. Spread mixture on top of the partially baked crust. Bake for an additional 20–25 minutes. Serve warm. Nancy’s Fudge

nancy’s fudge Serves 8–10 20 to 25 minutes ingredients 2 cups white sugar 1 cup whole milk 2 blocks baker’s chocolate 2 1/2 tbsp light Karo syrup 1 tsp vanilla 2 globs peanut butter 1 in pat of butter instructions 1. Combine sugar, milk, and chocolate in a heavy-bottom pan. Mix well and bring to a boil. Add Karo and cook to soft ball stage. 2. Remove from heat and add vanilla, butter, and peanut butter. 3. Beat until thick. Pour into a prepared baking dish (9×9 usually works). Lemon Cake

Preheat oven to 350º. Grease 9×13 pan. 2. Mix cake ingredients as directed on box and pour into pan. 3. Bake for 25-30 minutes. 4. While cake is baking: combine glaze ingredients in a small saucepan on medium heat. 5. Poke holes into cake while still warm and pour glaze over the cake. 6. Let cool slightly and serve. Pumpkin Pie

pumpkin pie Makes two 9in pies Oven at 350ºF 75–80 minutes ingredients 3 eggs 1 lb can of pumpkin 1/2 cup light brown sugar (packed) 1/2 cup white sugar 1 tsp cinnamon 1/2 tsp ground ginger 1/4 tsp ground nutmeg 1/8 tsp ground cloves 1/2 tsp salt 3/4 cup whole milk 1/2 cup heavy cream 2 9-inch uncooked pie crusts whipped cream for serving instructions 1. Preheat oven to 350º. 2. In a large bowl, beat eggs slightly, then add pumpkin, brown sugar, white sugar, spices, and sat and beat until blended. Slowly add milk and heavy cream. 3. Pour between both pie shells (you can get 2 slightly smaller pies or one regular pie and discard the extra). Bake for 60–70 minutes or until a knife inserted in the center comes out clean.  4.
