Crumb Cake

STREUSELKUCHEN (CRUMB CAKE) Serves 6–8 Oven at 350ºF 45 minutes ingredients 4 tbsp soft butter 1/2 cups white sugar 1 egg 1 cup flour 1/2 cup milk 1 heaping tsp baking powder pinch of salt   crumbs 1/4 lb butter 1 cup white sugar 1 1/2 cups flour 2 tbsp cinnamon (double this recipe for extra crumbs) instructions 1. Preheat oven to 350º. Grease 8×10 pan. 2. Cream butter; add sugar, egg, flour, milk, baking powder, and salt and combine until smooth. Pour into greased baking pan. 3. For crumbs: mix butter, white sugar, flour, and cinnamon in a bowl. Knead to form crumbs. Rub between hands to create an even distribution. 4. Sprinkle crumbs over the cake mixture. 5. Bake for 35 minutes. When finished, sprinkle with confectioner’s sugar. Chocolate Chip Cookies

chocolate chip cookies Makes 3–4 dozen Oven at 375ºF 15 minutes ingredients 2 1/4 cups flour 1 tsp baking soda 1 tsp salt 1 cup Crisco for baking 3/4 cups white sugar 3/4 cups packed brown sugar 1 tsp vanilla 2 eggs 12oz semi-sweet chocolate chips   instructions 1. Preheat oven to 375º. 2. Mix together flour, baking soda, and salt in small bowl. Set aside. 3. Cream together Crisco white sugar, vanilla, and brown sugar until smooth. Add eggs and beat until smooth. 4. Add flour mixture in 2-3 additions. 5. Stir in chocolate chips. 6. Use a medium scoop and place on lined cookie sheet. Bake for 9-11 minutes. Blueberry Crumble

blueberry crumble Serves 8–10 Oven at 350ºF 45 minutes ingredients filling 3 pints fresh blueberries 1 lemon (zest and juice) 3 tbsp sugar 3 tbsp flour 1 1/2 tsp cinnamon pinch of salt   topping 1 cup packed brown sugar 1 cup flour 2 cups rolled oats 1 stick cold salted butter instructions 1. Preheat oven to 350º. 2. Wash blueberries and leave wet. (Can add 1-2 tbsp of water to blueberries to have more sauce.) 3. Add zest of 1 lemon and juice of half to the blueberries. 4. Add sugar, flour, cinnamon, and salt and mix together. (Add sugar to taste if necessary.) 5. Pour mixture into 9×13 pan. 6. Combine topping ingredients in small bowl. Add cold butter in small pieces and cut in, using hands if necessary. 7. Spread topping over blueberry mixture. 8. Bake for 35 min or until bubbly and golden brown. Serve with vanilla ice cream. Banana Bread

banana bread Makes one loaf Set oven to 335ºF 45–55 minutes ingredients 2 cups flour 1/2 cup packed brown sugar 1/2 cup white sugar 1 tsp vanilla 1/4 tsp salt 3 eggs 1 tsp baking soda 3 tsp baking powder 2-3 very ripe banana 1/2 cup chocolate chips 1/2 melted butter instructions 1. Preheat oven to 335ºF and grease large bread loaf pan. 2. Add flour, salt, baking powder, and baking soda to a medium bowl. 3. In a separate bowl, add melted butter, eggs, and vanilla and whisk to combine. Add both sugars and stir. 4. Add dry ingredients to the wet ingredients and stir to combine. Add in the mashed bananas and chocolate chips. 5. Bake for 45-55 minutes. Bacon Cheddar Scones

bacon cheddar scones Makes approx. 8 Set oven to 425ºF ingredients 2 cups AP flour 1/2 tsp salt 1 tbsp baking powder 2 tsp sugar 4 tbsp cold butter 1 cup shredded cheddar 1/2 lb (or 6-8 slices) cooked bacon, crumbled 3/4 cup heavy cream 2 tbsp heavy cream instructions 1. Set oven to 425ºF and prepare baking sheet. 2. Whisk together flour, salt, baking powder, and sugar. 3. Cut in cold butter until mixture is crumbly. 4. Mix in shredded cheese and crumbled bacon. 5. Add 3/4 cup heavy cream and mix together. If the batter is not sticking together or there are many crumbs at the bottom, add more heavy cream until dough comes together. 6. Ball dough together and transfer to baking sheet. Press down until dough is approx. 3/4 in thick, and shape the outsides into a circular shape. 7. Brush the top with heavy cream until lightly covered. Bake for 22-24 minutes. (If center is not done, cut scone into 8 slices and cook for additional 3-4 minutes.)
