sugar cookies Makes about 20–25 cookies Oven at 350ºF 60 minutes ingredients 2/3 cup Crisco or butter 1 cup sugar 2 eggs 2/3 tso baking soda dissolved in 1 tbsp hot water 2 cup flour 1/3 tsp salt 1 tsp vanilla instructions 1. Preheat oven to 350ºF. Prepare a cookie sheet. 2. Cream butter/Crisco, then add sugar and eggs. Add baking soda water and combine. Add flour, salt, and vanilla and combine. 3. Use a scoop to create cookies and spread evenly on cookie sheet. Add sprinkles if desired. 4. Bake for 10–12 minutes at 350ºF or until finished. Note: add extra flour to create roll & cut cookie dough. Zucchini Bread
zucchini bread Serves 6–8 Oven at 350ºF 55 minutes ingredients 3 eggs 1 cup oil 3 cups whole wheat flour 2 cups honey 1 tsp salt 1 tsp baking soda 3 tsp cinnamon 1/4 tsp baking powder 2 cups grated zucchini 3 tsp vanilla 1 cup nuts (optional) instructions 1. Preheat oven to 350ºF. Prepare 2 bread pans. 2. Combine oil and honey. Add lightly beaten eggs and vanilla. 3. Combine dry ingredients (flour, salt, baking soda, cinnamon, baking powder). Add to the wet mixture slowly, mixing well. 4. Add zucchini and nuts if using. Bake for 40 minutes or until a knife comes away clean. Lemon Cake
lemon cake Serves 10–12 Oven at 350ºF 35–45 minutes ingredients 1 box lemon cake mix 1 box lemon instant pudding 4 eggs, beaten 3/4 cup vegetable oil 3/4 cup water glaze: 2 cups powder sugar 1/3 cup fresh lemon juice 3 tbsp water 2 tbsp melted butter instructions 1. Preheat oven to 350º. Grease 9×13 pan. 2. Mix cake ingredients as directed on box and pour into pan. 3. Bake for 25-30 minutes. 4. While cake is baking: combine glaze ingredients in a small saucepan on medium heat. 5. Poke holes into cake while still warm and pour glaze over the cake. 6. Let cool slightly and serve. Thumbprint Cookies
raspberry lemon thumbprint cookies Makes 4 dozen Oven at 350ºF 30–45 minutes ingredients cookie 2 1/4 cups flour 1 tsp baking powder 1/4 tsp salt 1 cup butter, room temp 2/3 cups sugar 2 egg yolks, large 1 tbsp lemon zest 1 tbsp fresh lemon juice 1 tsp vanilla extract filling 1/2 cup raspberry jam 1 tbsp Chambord instructions 1. Preheat oven to 350º. 2. Combine raspberry jam and Chambord in a small bowl. Set aside. 3. Combine flour, baking powder, and salt in a small to medium bowl. 4. Beat butter and sugar in a large bowl until creamy. Add egg yolks, lemon zest, lemon juice, and vanilla. 5. Add flour mixture in 2-3 additions and beat until clumps form. 6. Form one-inch balls with the dough (by hand or with small scooper). Place 1in apart on cookie sheet. Use index finger or 1/2 tsp spoon to create depressions in the middle of each dough ball. 7. Fill each depression with 1/2 or so of the raspberry jam and Chambord mixture. 8. Bake for 15-20 minutes, or until golden brown. Snickerdoodle Cookies
snickerdoodle cookies Makes 3–4 dozen Oven at 350ºF 45–55 minutes ingredients cookie 2 3/4 cups flour 2 tsp cream of tartar 1 tsp baking soda 1/2 tsp salt 1 cup Crisco for baking 1 1/2 cups white sugar 2 eggs 1 tsp vanilla topping 3 tbsp sugar 1 tbsp cinnamon instructions 1. Preheat oven to 350º. 2. Mix together flour, cream of tartar, baking soda, and salt in small bowl. Set aside. 3. Cream together Crisco and sugar until smooth. Add eggs and vanilla, mix well. Add the flour mixture in sections until well combined. 4. Combine sugar and cinnamon in a small dish. 5. Scoop dough into even balls (1in or use small-medium scooper). Roll dough ball in the sugar-cinnamon mix, coating the whole surface. 6. Place on lined cookie sheet and bake for 8-10 minutes. Irish Soda Bread
irish soda bread Makes one loaf Oven at 425ºF 55 minutes ingredients 4 cups AP flour 1/2 tsp salt 1 tsp baking powder 3 tbsp sugar 2 cups buttermilk 1 egg (lightly beaten) 2 tbsp melted Irish butter (Kerrygold) instructions 1. Preheat oven to 425º. 2. Sift dry ingredients together into large bowl. 3. Make a small well in the dry ingredients and add the egg, butter, and buttermilk. Mix dough together (works best by hand). Note: you may not need all 2 cups of buttermilk 4. Once dough has pulled together, transfer to floured surface and knead lightly to form a circle. 5. Place dough ball on baking sheet (will be lumpy). Cut X in the top and cook at 425º for 40-45 minutes. Note: Test the doneness by knocking; if it sounds hollow, it’s done. Gooey Cinnamon Cake
gooey cinnamon cake Serves 10–12 Oven at 350ºF 35–45 minutes ingredients sauce 2 cups brown sugar 1 1/2 cups water 1 tbsp butter 1/8 tsp salt 1 tsp vanilla extract 1 tsp rum flavor cake 2 cups flour 1 cup white sugar 2 tsp baking powder 2 tsp ground cinnamon 1/2 tsp salt 1 cup whole milk 2 tbsp melted butter 1 tsp vanilla extract 1 cup chopped pecans instructions 1. Preheat oven to 350º. 2. For the sauce: combine brown sugar, water, butter, and salt in a saucepan and bring to a boil over medium heat. Reduce heat and simmer for 5 minutes. Remove from heat and stir in vanilla extract and rum flavor. Set aside. 3. For the cake: combine flour, sugar, baking powder, cinnamon, and salt in a large bowl and mix well. Combine milk, melted butter, and vanilla in a small bowl. Add liquid ingredients to the dry and blend quickly. 4. Spread cake batter in greased 13×9 pan and pour sauce over top. Do not mix. Sprinkle pecans on top. 5. Bake for 20-25 minutes or until center bubbles up. Serve warm.
