prune spice cake

Serves 8–10

Oven at 300ºF

ingredients

3 eggs, beaten

1 cup vegetable oil

1 1/2 cup sugar

1 cup buttermilk

1 1/2 tsp baking soda (in milk)

1 cup diced prunes (or dates)

1 tsp cinnamon

1 tsp nutmeg

1 tsp allspice

1 tsp vanilla

2 cups flour

1 cup chopped nuts

 

sauce

1 cup sugar

1/2 cup buttermilk

1/2 tsp baking soda

1 tbps white Karo

1/2 stick butter

1/2 tsp vanilla

instructions

1. Set oven to 300ºF. Prepare a 9×13 baking dish.

2. Mix all cake ingredients together and pour into prepared baking dish. Bake for 45 minutes or until done. 

3. While cake is baking, mix sauce ingredients in a pot. Boil for 2 minutes at a lively boil. 

4. Poke holes in the cake and pour sauce over cake while hot.
