peanut butter pie

Serves 6–8

ingredients

1 pie shell, cooked/ready to eat

 

filling

1/4 cup cornstarch (or 1/2 cup flour)

2 cups scalded milk (recipe note: 1 cup canned milk and 1 cup water)

1/4 vanilla

2/3 cup sugar

1/4 tsp salt

2 tbsp butter

3 egg yolks, beaten

 

crumbs

1 cup powder sugar

1/2 cup creamy peanut butter

instructions

1. For the crumbs: mix the powder sugar and peanut butter together until crumbs form.

2. For the filling: mix all ingredients together, stirring constantly, until thick.

3. Spread 2/3 cup of the crumbs over the bottom of the pie shell (pre-cooked). Pour filling over the crumbs and refrigerate until solid. 

4. To serve, top with a layer of Cool Whip and sprinkle remaining crumbs over top. Keep refrigerated.
