Makes about 30 bars
Oven at 350ºF
60 minutes
2 cups flour, sifted
1/2 cup powdered sugar, sifted
1 cup vegetable oil
4 eggs, beaten
2 cups white sugar
1/3 cup lemon juice
3/4 cup flour***
1/2 tsp baking powder
1. Preheat oven to 350ºF. Prepare a 9×13 baking dish.
2. Sift together 2 cups of flour with 1/2 cup of powdered sugar. Cut in the oil until the mixture clings together.
3. Press mix into the 9×13 pan. Bake for 20–25 minutes or until lightly browned.
4. While the base is baking, beat eggs, sugar, and lemon juice together. Sift the flour*** and baking powder together, then stir into the egg mixture.
5. Pour over the HOT crust once it’s done baking. Put back into the oven for 25 minutes.
6. Sprinkle the top with powdered sugar. Cool and cut into bars.
***Start with 1/4 cup of flour for the egg mixture and add more until the consistency looks right. The recipe card has 3/4 cup in the ingredient list but 1/4 cup in the instruction list.
